Blackened Catfish

Serves 6
Ingredients
- 1 tsp Fresh thyme
- 2 tsp Lemon pepper marinade
- 1 tsp Onion powder
- 6 Farm raised catfish fillets
- 1 1/2 tsp Garlic powder
- 1 1/2 tsp Ground cayenne pepper
- 2 tbsp Sweet paprika
- 1 1/2 tsp Basil
- 2 1/2 tsp Kosher salt
- 1 cup Unsalted butter, melted
Instructions
- Heat a large cast iron skillet over high heat (usually takes about 10 minutes).
- In a small bowl, combine paprika, salt, onion powder, garlic powder, cayenne pepper, lemon pepper marinade, thyme and basil.
- Keep fillets refrigerated until ready to use. Dip each fillet in the melted butter, so that both sides are well coated.
- Sprinkle seasoning mix on both sides. Use 1 tablespoon of seasoning mix per fillet, patting in by hand.
- Place seasoned fillet on wax paper while preparing others.
- When done, place three fillets in a hot skillet. Drizzle each with one tablespoon of melted butter. There will be a lot of smoke, so kitchen should be well ventilated.
- Cook quickly, about two minutes per side. Remove to a warm platter.
- Repeat process with remaining fillets. Add salt and serve immediately with lemon wedges.
