Blackberry Bundt Cake

Unsaved Blackberry Bundt Cake

Ingredients

  • 1 cup Whole milk, let sit at room temp for at least 30 minutes before using
  • 2 Large eggs, let sit at room temp for at least 30 minutes before using
  • 4 oz Unsalted butter, 1 stick melted
  • 1/2 cup Vegetable oil, or any neutral flavored oil like avocado or sunflower oil
  • 1/2 cup Full fat sour cream, let sit at room temp for at least 30 minutes before using
  • 1 tsp Fine sea salt, if using iodized table salt, use 1/2 tsp
  • 1 tbsp Vanilla extract
  • 3 cups Cake flour, sifted
  • 1 cup Caster sugar or fine granulated sugar
  • 1 tbsp Baking powder
  • 1 pt Sweet Karoline Blackberries
  • 1 1/2 tbsp Brown sugar

Instructions

  1. Preheat oven to 375ºF.
  2. In a stand mixer with paddle attachment add butter, oil, sour cream, sugar, salt, vanilla extract an
  3. In a large mixing bowl combine flour, sugar and baking powder, and whisk to blend evenly. Pour wet mixture into dry and whisk until batter is smooth with no lumps. Set aside to rest.
  4. Combine blackberries with brown sugar in a bowl and gently toss until blackberries just start to break up and soften.
  5. Spray a Bundt pan liberally with non-stick spray. Add half the batter and spread out evenly with a spatula.
  6. Spread macerated blackberries over batter. Pour remaining batter over blackberries and gently even out batter as needed.
  7. Bake 40 to 50 minutes or until a toothpick inserted in center of cake pulls out clean.
  8. Sprinkle cake with powdered sugar or glaze with frosting before serving if desired.
