Unsaved Black Eyed Pea Jambalaya

Ingredients

  • 1 1/2 lb Andouille sausage, diced into chunks or sliced thin
  • 1 1/2 cups White rice
  • 2 tbsp Unsalted butter
  • 2 1/3 cups Beef broth
  • 1 Medium fresh white onion(s), sliced
  • 1 Medium Green bell peppers, diced
  • 30 oz Black eyed peas, drained
  • 1 tsp Cajun seasoning spice blend, plus more as needed
  • 1 Instant Pot Duo

Instructions

  1. Combine all ingredients into Instant pot, set mode to rice setting. Place lid on pot and allow to cook until timer goes off.
  2. Once timer goes off, follow Instant Pot instructions for removing lid and venting pressure valve.
  3. Season jambalaya to taste with more Cajun seasoning as needed.
