Black Beans & Cheese Frittata Skillet Omelet

Ingredients

  • 6 Large eggs, beaten
  • 1 cup Shredded Monterey jack cheese with jalapenos
  • 3 tbsp Canola oil
  • 2 Corn tortillas, cut in thin 1/4-inch strips
  • 15 oz Black beans
  • 1 1/2 cups Canned corn, drained

Instructions

  1. Heat a large nonstick skillet over high heat for 2 minutes and preheat oven to 375°F.
  2. Add the oil and tortilla strips and stir fry for 2 minutes or until golden. Drain tortilla strips on a paper towel.
  3. Beat eggs, add corn and drained beans.
  4. Place egg mixture in a cast-iron skillet sprayed with nonstick cooking spray and top with shredded cheese.
  5. Bake 8 to 10 minutes or until center is firm. Garnish with tortilla strips and serve.
