Black Bean Torta

Ingredients

  • 15 oz No salt added black beans, rinsed and drained
  • 1 tsp Ground cumin
  • 4 Bolillos
  • 1 cup Avocado, peeled and cubed
  • 1 cup Iceberg lettuce, shredded
  • 1 Fresh garlic clove, minced
  • 1/2 cup Piquillo peppers
  • 1/4 cup Pickled jalapeños, stems removed, seeded and chopped
  • 1/2 Red onion, sliced
  • 1 Roma tomato, sliced
  • 1/3 cup Queso fresco

Instructions

  1. Place black beans in a microwave-safe bowl and microwave 3 minutes or until beans are heated through.
  2. Using a fork, mix cumin in beans and mash, leaving some whole.
  3. For each sandwich, spread a layer of beans on both sides of buns.
  4. Layer avocado, lettuce, garlic, peppers, jalapeños, onion, tomato and queso fresco on bottom bun and top with remaining bun.
