Black Bean Torta

Ingredients
- 15 oz No salt added black beans, rinsed and drained
- 1 tsp Ground cumin
- 4 Bolillos
- 1 cup Avocado, peeled and cubed
- 1 cup Iceberg lettuce, shredded
- 1 Fresh garlic clove, minced
- 1/2 cup Piquillo peppers
- 1/4 cup Pickled jalapeños, stems removed, seeded and chopped
- 1/2 Red onion, sliced
- 1 Roma tomato, sliced
- 1/3 cup Queso fresco
Instructions
- Place black beans in a microwave-safe bowl and microwave 3 minutes or until beans are heated through.
- Using a fork, mix cumin in beans and mash, leaving some whole.
- For each sandwich, spread a layer of beans on both sides of buns.
- Layer avocado, lettuce, garlic, peppers, jalapeños, onion, tomato and queso fresco on bottom bun and top with remaining bun.
