Black Bean Nachos

Ingredients
- 1 Low sodium black beans
- 1 tsp Olive oil
- 1 Zucchini, diced
- 1/2 cup Frozen corn
- 1/2 tsp Lower sodium taco seasoning
- 6 Baked tostadas
- 1 cup 2% shredded cheddar cheese
Instructions
- In a small saucepan, heat black beans just until warmed through.
- Place oil in a separate skillet and add zucchini, corn and taco seasoning. Stir to combine and cook gently until heated through. Remove from heat.
- To build nachos, layer black beans on tostadas then top with corn mixture and sprinkle with cheese. Cut in half, and serve.
