Black Bean Nachos

Ingredients

  • 1 Low sodium black beans
  • 1 tsp Olive oil
  • 1 Zucchini, diced
  • 1/2 cup Frozen corn
  • 1/2 tsp Lower sodium taco seasoning
  • 6 Baked tostadas
  • 1 cup 2% shredded cheddar cheese

Instructions

  1. In a small saucepan, heat black beans just until warmed through.
  2. Place oil in a separate skillet and add zucchini, corn and taco seasoning. Stir to combine and cook gently until heated through. Remove from heat.
  3. To build nachos, layer black beans on tostadas then top with corn mixture and sprinkle with cheese. Cut in half, and serve.
