Black Bean Avocado Salad

Ingredients

  • 1/2 cup Fresh cilantro
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Lime(s), juiced
  • 1/8 tsp Hot Sauce
  • 2 Large avocado, chopped
  • 1 cup Sweet white corn
  • 30 oz Black beans, drained & rinsed
  • 1 cup Tomatoes, diced
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground black pepper

Instructions

  1. To make dressing, whisk together cilantro, oil, lime juice, and hot sauce in a small bowl.
  2. In a separate bowl, combine avocado, corn, beans, and tomato.
  3. Add dressing, salt and pepper. Serve with tortilla chips.
