Black Bean and Corn Salsa Salad

Ingredients
- 11 oz Chipotle Corn
- 1/2 cup Whataburger Jalapeño Ranch
- 1/3 cup Fresh cilantro, finely chopped
- 1 Small lime, juiced
- 1 cup Red bell pepper, finely diced
- 15 oz No Salt Added Black Beans
- 1 Large Haas avocado, cubed
- 12 oz Pico de gallo, mild, medium or hot
Instructions
- Drain and rinse beans. Place beans in a medium sized bowl.
- Add corn, pico de gallo, bell pepper, cilantro and dressing. Stir gently to combine flavors. Chill until ready to serve.
- Add avocado and lime juice just before serving. Adjust seasoning with salt and pepper if desired.
- Chef's Note: This recipe can be a great side salad with your favorite Tex-Mex food, or used as a topping for a taco salad.
