Unsaved Black Bean and Corn Salsa Salad

Ingredients

  • 11 oz Chipotle Corn
  • 1/2 cup Whataburger Jalapeño Ranch
  • 1/3 cup Fresh cilantro, finely chopped
  • 1 Small lime, juiced
  • 1 cup Red bell pepper, finely diced
  • 15 oz No Salt Added Black Beans
  • 1 Large Haas avocado, cubed
  • 12 oz Pico de gallo, mild, medium or hot

Instructions

  1. Drain and rinse beans. Place beans in a medium sized bowl.
  2. Add corn, pico de gallo, bell pepper, cilantro and dressing. Stir gently to combine flavors. Chill until ready to serve.
  3. Add avocado and lime juice just before serving. Adjust seasoning with salt and pepper if desired.
  4. Chef's Note: This recipe can be a great side salad with your favorite Tex-Mex food, or used as a topping for a taco salad.
