Quick & easy:Black Bean and Cheese Taco

Serves 4

Ingredients

  • 15 oz No salt added black beans, washed and drained
  • 4 Carb sense flour tortillas
  • 1 cup Mexican blend shredded cheese

Instructions

  1. Place beans in a non-stick skillet set over medium heat and cook for 2 minutes.
  2. While continuing to cook, use a rubber spatula to mash beans until they resemble refried beans.
  3. Once beans are hot, spread a generous portion on a tortilla, and top with cheese.
  4. Place loaded tortilla in the microwave for 30 seconds or until cheese melts. Serve hot.
  5. Repeat this process with the remaining tortillas.
