Black and White Garlic Caesar

Ingredients
- 1 Large eggs
- 1 Bulb Black Gold Garlic, approximately 1 oz.
- 1 Large Fresh Cut Peeled Garlic Cloves, lightly crushed
- 1/3 cup Red wine vinegar
- 1 tbsp Dijon mustard
- 1/4 cup Parmesan Fresh Grated Cheese
- 1 tbsp Worcestershire sauce
- 1 1/3 cups Extra virgin olive oil
- 12 oz Romaine Hearts, tops and bottoms slightly trimmed and leaves left whole
- 1 package Oven-Baked Parm Crisps, crushed, as needed for garnish
- 1 tsp Fresh lemon, zest only as needed for garnish
Instructions
- Add egg to a quart-size container followed by black garlic, fresh garlic, red wine vinegar, Dijon mustard, Parmesan cheese, Worcestershire sauce, and olive oil.
- Using an immersion/stick blender, blend everything together until smooth and thick. Season with lots of fresh cracked pepper and a pinch of salt as needed. Cover and chill for at least 30 minutes.
- Meanwhile, assemble salad. Place romaine hearts tight up against each other on a serving plate.
- When dressing has finished chilling, evenly drizzle it over romaine as desired. Garnish with crumbled Parmesan crisps and fresh lemon zest before serving.
- Chef's Note: Refrigerate leftover dressing for up to 5 days.
