Birthday Cake Balls

Ingredients

  • 15.2 oz Yellow cake mix
  • 1 cup Water
  • 1/3 cup Vegetable oil
  • 3 Large eggs
  • 16 oz Chocolate frosting
  • 7.5 oz Rainbow nonpareil sprinkles, about half of the jar
  • 2 tbsp Coconut oil, extra virgin oil is best
  • 32 oz Vanilla candy coating

Instructions

  1. Prepare and bake cake mix according to package directions. Transfer to a bowl and add chocolate icing and half the sprinkles. Mix well.
  2. Using a 3 oz. scoop or a large spoon, scoop the cake into mounds, then roll into balls. Continue until all cake is used.
  3. Next, combine the coconut oil with candy coating then melt according to package directions and pour over each ball. Gently smoothing the top so it covers the sides.
  4. Sprinkle the top with nonpareils. Let cool completely before serving. Store in an airtight container in the fridge.
  5. Chef's Notes: Add 1 - 2 tablespoon of coconut oil to melting candy coating to make it smother and easier to pour.
