- 2 tbsp Fresh jalapeno pepper(s), minced
- 1/3 cup Fresh shallots, minced
- 1 tbsp Ginger paste
- 2 lb Beyond meat beyond ground beef
- 1 cup Fresh cilantro, chopped
- 2 tbsp Rice vinegar
- 1 cup Sliced mushroom(s)
- 3 tbsp Vegetable oil
- 1/2 cup Fresh mint, chopped
- 4 Garlic cloves, minced, approximately 1.5 tbsp.
- 3 tbsp Tamari
- 1 tbsp Granulated sugar
- 4 cups Kale greens, roughly chopped, tightly packed

Instructions
- Set a large Dutch oven over medium heat.
- Add oil, garlic, shallots, ginger paste and mushrooms. Sauté 4 to 5 minutes or until garlic and shallots are just soft.
- Add Beyond Meat and kale, break apart meat and continue to stir-fry everything until meat starts to brown slightly, approximately 10 to 12 minutes.
- Add in rice vinegar, tamari, sugar and sambal oelek. Stir and continue to cook until liquid is almost all reduced.
- Remove from heat, add basil, cilantro, mint and jalapeños. Stir and serve over a bowl of rice or sticky rice.
- Chef's Note: This dish is excellent garnished with thinly sliced cucumbers marinated with salt and rice vinegar or pickled shallots.
