  • 1 tbsp Ginger paste
  • 2 lb Beyond meat beyond ground beef
  • 1 cup Fresh cilantro, chopped
  • 2 tbsp Rice vinegar
  • 1 cup Sliced mushroom(s)
  • 3 tbsp Vegetable oil
  • 1/2 cup Fresh mint, chopped
  • 4 Garlic cloves, minced, approximately 1.5 tbsp.

Instructions

  1. Set a large Dutch oven over medium heat.
  2. Add oil, garlic, shallots, ginger paste and mushrooms. Sauté 4 to 5 minutes or until garlic and shallots are just soft.
  3. Add Beyond Meat and kale, break apart meat and continue to stir-fry everything until meat starts to brown slightly, approximately 10 to 12 minutes.
  4. Add in rice vinegar, tamari, sugar and sambal oelek. Stir and continue to cook until liquid is almost all reduced.
  5. Remove from heat, add basil, cilantro, mint and jalapeños. Stir and serve over a bowl of rice or sticky rice.
  6. Chef's Note: This dish is excellent garnished with thinly sliced cucumbers marinated with salt and rice vinegar or pickled shallots.
