Beyond Meat Italian Sausage and Olive Pasta

Serves 4

Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 4 Plant based hot Italian sausage
  • 1 1/2 cups Yellow onions, julienned
  • 1/2 cup Olive salad
  • 16 oz Penne rigate, cooked, rinsed, and lightly oiled
  • 4 oz Mozzarella cheese, shredded
  • 2 tbsp Vegan parmesan

Instructions

  1. Place a large skillet over medium-high heat. Add oil to hot pan and swirl to coat.
  2. Add sausage links and cook 6 to 8 minutes, turning to brown each side. Remove to a cutting board and slice into bite size rounds.
  3. To same pan, add onions and cook 2 minutes until softened. Stir in olive salad and cook 30 seconds.
  4. Add cooked pasta and sliced sausage and toss until heated through. Fold in shredded cheese and remove from heat. Garnish with Parmesan cheese if desired.
