Beyond Bolognese with Spaghetti

Unsaved Beyond Bolognese with Spaghetti

Ingredients

  • 8 oz Extra virgin olive oil
  • 1 lb Plant-based ground beef, plant-based
  • 14 oz Plant-based Italian sausage, plant-based, removed from casings
  • 1 Yellow onions, small diced
  • 2 Carrots, small diced
  • 8 oz Sliced cremini mushrooms
  • 1 cup Dry red wine
  • 1 cup Oat milk
  • 24 oz Tomato purée
  • 1 lb Spaghetti noodles, cooked per package instructions

Instructions

  1. Add half of the oil to a rondeau or Dutch Oven placed over high heat. Add Sausage and beef, break up with a spatula, and cook 3 to 4 minutes until well browned.
  2. Add onions, carrots and mushrooms, and cook until onions are translucent, about 3 minutes.
  3. Deglaze the pan with the wine, reduce. Stir in oat milk and tomato purée and cook until vegetables are tender and sauce is a rich thick consistency.
  4. Drain the pasta when properly cooked (about 12-15 minutes) and place back in the cooking pot after draining. Add as much of the remaining olive oil as needed to keep the pasta from sticking together. Serve Beyond Bolognese sauce over cooked spaghetti.
