Best Organic Pumpkin Pie

Ingredients
- 2 Large brown eggs
- 3/4 cup Coconut sugar
- 1/2 tsp Salt
- 1 1/2 tsp Ground cinnamon
- 1 tsp Ground ginger
- 1/4 tsp Ground nutmeg
- 1/4 tsp Ground cloves
- 1/4 tsp Ground cardamom
- 1 tsp Lemon(s), grated lemon zest
- 15 oz Solid pack pumpkin
- 12 oz Evaporated milk
- 1 Pie crust
Instructions
- Preheat oven to 425ᵒF.
- Beat eggs together in a large bowl. Add sugar, salt, cinnamon, ginger, nutmeg, cloves, cardamom and lemon zest. Gradually stir in pumpkin puree and evaporated milk using an electric mixer. Mixture should be very smooth.
- Gently press pie crust dough into a pie pan. Pour into prepared pie crust. Bake for 15 minutes at 425ᵒF. Then turn oven down to 350ᵒF and bake an additional 45 minutes, or until center is set.
- Remove from oven and let cool on a wire rack for at least 2 hours. Makes 1 - 9 inch pie.
