Unsaved Beef Tenderloin Kabobs

Ingredients

  • 2 Bamboo skewers
  • 1/2 lb Beef tenderloin, cut into quarters
  • 4 tbsp Salsa ranch dressing
  • 4 Baby bella mushrooms
  • 1 Zucchini, cut into 4 pieces

Instructions

  1. Preheat oven to 400ºF.
  2. Thread each skewer in the following order: mushroom, beef, zucchini, mushroom, beef, and zucchini.
  3. Heat a large oven-safe, non-stick skillet to high.
  4. Add 1 tablespoon of olive oil to the pan. Arrange skewers in the pan, leaving space between them.
  5. Sear on both flat sides for 1 minute each.
  6. Place pan in the oven and cook for 15 to 20 minutes.
  7. When beef has reached 130ºF, remove from oven and top with salsa ranch dressing.
