Unsaved Beef Stuffed Poblano Peppers

Ingredients

  • 2 Poblano peppers
  • 12 oz Fajita style vegetable blend
  • 1 1/2 lb Lean ground beef
  • 2 tbsp Cilantro avocado dressing
  • 1/2 cup No salt added black beans, canned, rinsed and drained

Instructions

  1. Cut poblano peppers in half and remove the seeds.
  2. Place a large skillet over medium-high heat.
  3. Add 1 Tablespoon of grapeseed oil to the hot pan followed by the fajita vegetables. Cook for 5 minutes.
  4. Add beef and cook, breaking apart with a fork, until meat is no longer pink, about 5 minutes.
  5. Stir in cilantro avocado dressing and black beans.
  6. Preheat oven to 375ºF. Meanwhile, fill poblano peppers with beef mixture and place on a baking sheet.
  7. Bake for 10 minutes. Remove from oven and garnish with your favorite cheese melted on top, if desired.
