Beef & Barley Salad with Mushrooms

Unsaved Beef & Barley Salad with Mushrooms

Ingredients

  • 4 cups Baby spring salad mix
  • 1/2 cup Cherry tomatoes, halved
  • 1 cup Dried pearl barley
  • 1/4 cup Green onions, chopped
  • 1/2 tsp Kosher salt
  • 1/2 lb Beef flank steak
  • 1/2 tsp Ground black pepper
  • 2 tsp Low sodium soy sauce
  • 3 tsp No-stick extra virgin olive oil spray, divided
  • 8 oz Baby bella mushrooms, quartered

Instructions

  1. Heat 1 teaspoon olive oil in a medium skillet on medium-high.
  2. Sauté mushrooms 6 to 7 minutes until well browned then remove from heat and set aside.
  3. In a small bowl, mix 1 teaspoon olive oil with soy sauce.
  4. In a large bowl, combine barley, mixed greens, tomatoes and mushrooms. Add soy sauce mixture and toss until greens are coated. Set aside.
  5. Preheat broiler.
  6. Brush flank steak with remaining olive oil and season with salt and pepper then place on a foil lined baking sheet.
  7. Broil each side of steak 6 to 8 minutes. Allow steak to rest at least 10 minutes before slicing.
  8. Divide mixed greens between 4 bowls and top with sliced steak and green onions.
  9. Cook barley according to package directions and set aside.
