Bean and Chicken Tostadas

Ingredients
- 1 1/2 lb Pollo casero
- 2 cups Refried Pinto Beans
- 8 Ready To Cook Flour Tortillas
- 1 cup Queso tipo cotija rallado
- 2 tbsp Fresh cilantro, finely chopped
Instructions
- Heat a large non-stick pan on medium-high for about 1 minute. Add chicken and cook for 5 to 6 minutes. Set aside for later.
- Preheat oven to 400˚F.
- Add beans to the same non-stick pan and heat on medium for 3 to 5 minutes. Set aside for later.
- Coat a half sheet pan with non-stick spray and lay 4 tortillas into pan. Place a second sheet pan on top of the other, then put in the oven. Bake for 12 minutes or until tortillas are brown and hard. Repeat step for remaining tortillas.
- Remove pan from oven once tostadas are done, then place them on a plate. Spread 1 tablespoon of beans on each tostada, then add chicken, cheese and cilantro, and enjoy.
