Bean and Chicken Tostadas

Ingredients

  • 1 1/2 lb Pollo casero
  • 2 cups Refried Pinto Beans
  • 8 Ready To Cook Flour Tortillas
  • 1 cup Queso tipo cotija rallado
  • 2 tbsp Fresh cilantro, finely chopped

Instructions

  1. Heat a large non-stick pan on medium-high for about 1 minute. Add chicken and cook for 5 to 6 minutes. Set aside for later.
  2. Preheat oven to 400˚F.
  3. Add beans to the same non-stick pan and heat on medium for 3 to 5 minutes. Set aside for later.
  4. Coat a half sheet pan with non-stick spray and lay 4 tortillas into pan. Place a second sheet pan on top of the other, then put in the oven. Bake for 12 minutes or until tortillas are brown and hard. Repeat step for remaining tortillas.
  5. Remove pan from oven once tostadas are done, then place them on a plate. Spread 1 tablespoon of beans on each tostada, then add chicken, cheese and cilantro, and enjoy.
