Ingredients

  • 1 tbsp Canola oil
  • 1 Small sweet onion, sliced very thin
  • 1 Medium red bell pepper, cored, seeded and sliced very thin
  • 8 Jalapeño cheddar link sausages
  • 8 H-E-B Mixla Tortillas
  • 1/3 cup Bacon bourbon barbeque sauce

Instructions

  1. Heat a large skillet over medium-high heat. Add oil, onions and bell peppers. Stir and cook until onions begin to soften, about 3 to 4 minutes.
  2. Push onions and peppers to outside of side of pan and add sausages. Cook on all sides to brown, about 10 minutes.
  3. Add 1/4 cup water to pan about halfway through cooking to deglaze pan.
  4. Meanwhile, heat another empty, dry skillet over medium heat to toast tortillas lightly on both sides. Keep warm until ready to serve.
  5. Remove sausages from skillet when well browned and heated through. Remove skillet from heat.
  6. Stir BBQ sauce through onions and peppers.
  7. To serve place sausage in a toasted tortilla and top with onions and peppers. Garnish with fresh cilantro, if desired.
