BBQ Sausage Wraps

Ingredients
- 1 tbsp Canola oil
- 1 Small sweet onion, sliced very thin
- 1 Medium red bell pepper, cored, seeded and sliced very thin
- 8 Jalapeño cheddar link sausages
- 8 H-E-B Mixla Tortillas
- 1/3 cup Bacon bourbon barbeque sauce
Instructions
- Heat a large skillet over medium-high heat. Add oil, onions and bell peppers. Stir and cook until onions begin to soften, about 3 to 4 minutes.
- Push onions and peppers to outside of side of pan and add sausages. Cook on all sides to brown, about 10 minutes.
- Add 1/4 cup water to pan about halfway through cooking to deglaze pan.
- Meanwhile, heat another empty, dry skillet over medium heat to toast tortillas lightly on both sides. Keep warm until ready to serve.
- Remove sausages from skillet when well browned and heated through. Remove skillet from heat.
- Stir BBQ sauce through onions and peppers.
- To serve place sausage in a toasted tortilla and top with onions and peppers. Garnish with fresh cilantro, if desired.
