BBQ Pork Meatloaf

Ingredients
- 2 lb Ground pork
- 1 1/2 tsp Morton Coarse Kosher Salt, plus more as needed
- 2 tsp H-E-B Black Pepper Grinder, plus more as needed
- 1/3 cup Fresh cilantro, chopped
- 1/2 cup H-E-B Japanese Style Panko Plain Bread Crumbs
- 1 Hill Country Fare Grade A Large Eggs
- 1 cup Ice cold water
- 1 tbsp Extra virgin olive oil
- 1 cup Fresh yellow onion, diced
- 4 Peeled garlic cloves, minced
- 12 oz Sweet and spicy barbecue sauce, divided use
Instructions
- Preheat oven to 350°F.
- In a bowl combine, pork, salt and pepper, cilantro, bread crumbs, egg, and cold water. Mix well by hand until everything is absorbed. Set aside and prepare onions and garlic.
- In a non-stick sauté pan add oil, onions and garlic. Sauté for 5 to 6 minutes until onions are just starting to color, then add BBQ sauce and cook until BBQ sauce is bubbly and slightly reduced, approximately 4 to 5 more minutes.
- Add cooked contents to pork mixture and mix well to incorporate everything. Spray a non-stick loaf pan and place pork in pan.
- Press pork to form it evenly in pan. Bake for 40 to 50 minutes or until internal temperature of meatloaf is 165°F. Add remaining BBQ sauce to top of meatloaf while it rests. Cut and serve.
