  • 1/3 cup Mexican crema

  • 2 tbsp Green onions, thinly sliced
  • 1 Large Haas avocado, thinly sliced
  • 1/4 cup Fresh cilantro, finely chopped

Instructions

  1. Preheat an empty, dry cast iron skillet over medium heat.
  2. Spread 4 tortillas out on a flat work surface. Use spray oil in quick, short bursts to lightly coat one side of tortilla. Flip over.
  3. Divide 1 cup of the cheese equally among the 4 tortillas. Mix BBQ sauce with shredded chicken. Spread a layer of chicken evenly between the 4 tortillas. Top with remaining cheese.
  4. Place remaining tortillas on top and press down gently. Spray outer side of top tortilla with a light coating of oil.
  5. Place in the heated skillet and cook until golden brown and toasty, about 3 to 4 minutes on each side. Serve with a drizzle of crema and garnish with avocado, green onions and cilantro.
