Bayou Brothers Green Gumbo

Serves 6
Ingredients
- 2 Fresh celery stalk(s), diced
- 33 fl oz Gumbo mix
- 1 cup Fresh Swiss chard, chopped
- 2 Medium green bell pepper(s), diced
- 2 tbsp Peanut oil
- 1 lb Argentine red shrimp
- 1 cup Fresh collard greens, chopped
- 4 Fresh okra pods, diced
- 1 Medium fresh yellow onion(s), diced
- 1 cup Mustard greens, chopped
Instructions
- Add peanut oil to a large stock pot and heat on medium for 1 to 2 minutes.
- Add onions, bell peppers, celery, and okra and sauté until soft, about 3 minutes.
- Pour gumbo mix into stock pot and stir to combine with vegetables.
- Add greens to the pot and stir. Greens will cook down and soften.
- Reduce heat to low, and let gumbo simmer for 80 minutes, stirring occasionally. Add shrimp and simmer 10 minutes more. Serve over white rice and enjoy!
