Basil Roasted Cauliflower

Ingredients

  • 1 Large Cauliflower, cut into small florets
  • 1/3 cup Extra virgin olive oil, plus 1 tablespoon, divided
  • 1 tsp Kosher salt
  • 2 tbsp Whole almonds, toasted and chopped
  • 1/4 cup Parmesan cheese
  • 2 Fresh basil
  • 2 Garlic cloves

Instructions

  1. Preheat oven to 400ºF.
  2. Toss cauliflower with 1 tablespoon olive oil and kosher salt.
  3. Place cauliflower on sheet pan and roast 30 to 45 minutes or until cauliflower is fragrant and starting to brown.
  4. To make pesto, combine 1/3 cup olive oil, almonds, Parmesan cheese, basil leaves and garlic in a food processor.
  5. Remove cauliflower from oven and coat with a generous amount of pesto.
