Basil Chicken Saltimbocca

Ingredients
- 1 lb Thin sliced chicken breasts, approximately 1 to 1.4 pounds or 4 breasts
- 1 cup Fresh basil leaves, loosely packed plus more as needed
- 3 oz Thinly sliced prosciutto
- 1 tbsp Vegetable oil, plus more as needed for sautéing
- 2 tbsp Fresh squeezed lemon juice
- 1/4 cup Fresh parsley, chopped as needed to garnish
Instructions
- Place chicken breasts on a cutting board and season with salt and pepper on both sides.
- Press 2 to 3 leaves of basil flat on each seasoned chicken breast to just cover.
- Gently wrap prosciutto slices around each chicken breast to cover the basil, securing tightly to ensure it adheres to the chicken during cooking.
- Secure tightly to ensure prosciutto adheres to each chicken breast during cooking.
- Place a large non-stick skillet over medium-high heat. Add oil and allow to get hot.
- Once hot, place chicken in pan and cook for at least 5 minutes to crisp prosciutto. Gently flip and continue to cook until internal temperature reaches at least 165ºF.
- Transfer chicken to a serving plate, drizzle with any remaining pan juices, and garnish with lemon juice and parsley as needed.
