Barbacoa Roasted Carrots

Ingredients
- 2 lb Baby carrots, cut in half lengthwise
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Mi Tienda Barbacoa Seasoning
Instructions
- Preheat oven to 400°F.
- In a large bowl, combine carrots, olive oil, and barbacoa seasoning. Toss well.
- Spread carrots out on a sheet pan lined with parchment paper then roast 30 to 40 minutes or until nicely caramelized.
- Season to taste with salt and pepper as needed. Allow to cool slightly before serving.
