Ingredients

  • 3 1/3 cups Unbleached all purpose flour, plus more for dusting surfaces and dough as needed
  • 2 tbsp Kosher salt
  • 1/3 cup Pure cane sugar
  • 1 2/3 cups Whole milk, warmed
  • 1 cup Cake flour
  • 4 oz Unsalted butter, melted
  • 1/4 cup Vegetable oil, plus more as needed
  • 0.5 oz Dry active yeast, 2 packets

Instructions

  1. In a stand mixer fitted with dough hook attachment, add warm milk and butter, followed by flours, sugar, salt and yeast.
  2. Set mixer to medium low speed and mix until ingredients just come together, then set a timer for 12 minutes and allow dough to knead. If dough is still sticking to bowl 5 minutes into kneading add 1 tablespoon of flour.
  3. Once dough has kneaded, form into a ball and place into a lightly oiled bowl. Cover with plastic wrap and allow to rise in a warm place for 1 hour.
  4. Once dough is doubled in size, turn out onto a floured work surface, dust dough with flour lightly and roll out dough to approximately a 1/4 inch thickness.
  5. Using approximately a 3 to 4 inch circular dough cutter, cut out dough and brush each cut out of dough with oil. Fold each dough circle in half and gently press with a rolling pin to flatten gently.
  6. Place each folded bun onto a sheet pan lined with parchment paper. Cover with plastic wrap and allow to rise for another 15 to 20 minutes.
  7. While buns are rising a second time prepare steamer basket by bringing a shallow pot of water to a simmer then place steamer basket inside. Depending on size of steamer, place about 6 buns in basket, cover and cook for 12 to 15 minutes until puffy and fully cooked.
  8. Repeat steaming process with each batch of buns, depending on size of your steamer you will need to work in batches. Once cooked stuff with your favorite meats and pickled veggies.
