Banana Pudding Brownies

Unsaved Banana Pudding Brownies

Ingredients

  • 18.3 oz Fudge brownie mix
  • 3 tbsp Water
  • 2 Large Eggs
  • 4 oz Unsalted butter, melted
  • 3.4 oz Vanilla instant pudding mix
  • 2 cups Heavy whipping cream
  • 1/2 tsp Kosher salt
  • 1/2 cup Sweetened condensed milk
  • 4 Bananas, 2 chopped, 2 sliced, divided use
  • 8 oz Whipped topping, thawed then refrigerated until needed
  • 1 cup Vanilla wafers, crushed, plus more as needed for topping

Instructions

  1. Preheat oven to 350ºF.
  2. In a bowl combine brownie mix, water, eggs and melted butter. Whisk until batter is smooth and all ingredients are well incorporated.
  3. Pour into a 9 x 13 inch oven-safe casserole or baking dish and smooth out until evenly distributed.
  4. Bake for 25 to 30 minutes or until a toothpick inserted in the center pulls out clean.
  5. Allow brownies to cool completely. Meanwhile, make pudding mix.
  6. Set up a stand mixer with a whisk attachment. Add pudding mix, heavy cream, salt, sweetened condensed milk and 2 chopped bananas to mixer bowl.
  7. Start mixer on medium speed to incorporate everything, then turn to high speed until mixture is thick and fluffy.
  8. Remove bowl from stand and gently fold in whipped topping.
  9. To assemble, pour pudding mixture over cooled brownies and smooth out evenly with an offset spatula.
  10. Place sliced bananas evenly over pudding and garnish with crushed vanilla wafers.
  11. Cover and refrigerate for at least 30 minutes to allow everything to set. Cut into squares and serve.
