Banana Bread made with Gluten Free Flour

Ingredients

  • 8 tbsp Salted Butter
  • 1 cup Brown Sugar, packed
  • 3 Large eggs
  • 1 tbsp Vanilla Extract
  • 1 tsp Kosher Salt
  • 1 cup Gluten free flour
  • 1 tsp Baking soda
  • 1 tsp Double acting baking powder
  • 1 cup Oats
  • 2 tbsp Flaxseed dietary supplement
  • 1 cup Bananas, ripe, mashed
  • 3/4 cup Non-fat plain Greek yogurt
  • 1 cup Pecan Pieces, chopped

Instructions

  1. Preheat oven to 350ºF. Grease a 9 x 5 x 3-inch loaf pan and set aside.
  2. Using an electric mixer, cream butter and brown sugar in a large mixing bowl.
  3. Add in eggs one at a time, blending well after each addition. Then add vanilla and salt.
  4. In a separate bowl, combine gluten free flour, baking soda, baking powder, oats and flaxseed.
  5. Mix mashed banana and yogurt together in a small bowl.
  6. Blend half of dry mixture into butter sugar mixture. Then blend in half of banana yogurt mixture. Repeat.
  7. Add pecans, if desired, then transfer mixture to prepared pan.
  8. Bake 45 to 50 minutes or until a toothpick inserted in center comes out clean.
  9. Cool several minutes in the pan then turn out onto a rack to cool.
