Unsaved Balsamic Watermelon Vinaigrette

Ingredients

  • 1/3 cup Balsamic vinegar
  • 1/3 cup Watermelon, juiced
  • 1 tsp Dijon mustard
  • 1 Fresh garlic clove, minced
  • 1/3 cup Extra virgin olive oil
  • 1/4 tsp Kosher salt
  • 1/4 tsp Ground black pepper

Instructions

  1. In a small bowl combine vinegar, watermelon juice, mustard and garlic.
  2. Add oil in a slow steady stream, whisking constantly.
  3. Season with salt and pepper to taste.
  4. Serve over mixed greens and strawberries.
