Baked Pork Schnitzel

Serves 4

Ingredients

  • 4 tbsp Corn starch
  • 1 tbsp Extra virgin olive oil
  • 1/4 tsp Garlic powder
  • 1/2 tsp Ground black pepper
  • 1 Large egg, beaten
  • 1/4 tsp Onion powder
  • 1/4 tsp Paprika
  • 1/2 cup Plain bread crumbs
  • 1 lb Pork tenderloin, trimmed
  • 1/2 tsp Salt

Instructions

  1. Dip each pork medallion in egg mixture then dredge in bread crumbs until both sides are thoroughly coated.
  2. In a separate bowl, whisk together egg and 3 tablespoons water.
  3. In a shallow dish combine bread crumbs, garlic powder, onion powder, paprika, black pepper, salt and olive oil.
  4. Lightly spray a foil lined sheet pan with nonstick cooking spray. Set aside.
  5. Place breaded medallions on prepared sheet pan and bake 15 to 17 minutes or until golden brown and internal temperature reaches 145ºF.
  6. Preheat oven 400ºF.
  7. Serve with braised or roasted cabbage.
  8. Sprinkle cornstarch on both sides then gently pat.
