Baked Chicken Gorditas Verde

Ingredients

  • 1/3 cup Fresh cilantro, chopped
  • 1 Limes, juiced
  • 1/8 tsp Ground black pepper
  • 1 Poblano peppers, seeds removed
  • 1/4 cup Extra virgin olive oil
  • 16 oz Original rotisserie chicken, shredded
  • 4 Tomatillos, husks removed, washed and quartered
  • 1 tsp Chili powder
  • 2 cups Instant corn masa flour
  • 14 oz Mexican style refried beans
  • 1 1/2 cups Warm water
  • 1 Garlic cloves, chopped
  • 6 Large avocado, chopped
  • 1 1/8 tsp Kosher salt

Instructions

  1. Combine tomatillos and garlic in small bowl. Cover with plastic wrap, microwave on high power 1 minute.
  2. Add lime juice, process in food processor or blender bowl to a smooth texture.
  3. Add poblano peppers, process 5 seconds until pepper is fine chopped.
  4. Combine salsa mixture, avocados and cilantro in bowl. Season to taste with salt and pepper. Set aside.
  5. Heat oven to 400°F. Line baking sheet with foil, spray with non-stick spray.
  6. Combine masa, water, olive oil, chili powder and salt in bowl. Knead a couple of minutes.
  7. Place on a floured surface (masa or all purpose flour). Divide dough into 24 balls, place in a zip close bag to keep moist.
  8. Press each ball between wax paper into a 3-inch diameter round.
  9. Place on prepared baking sheet. Spray gorditas with non-stick spray on both sides. Bake 12 minutes or until golden.
  10. Fill each gordita with 1 tablespoon beans, 2 tablespoons chicken and 1 tablespoon of avocado tomatillo salsa. Serve warm.
