Baked Beef Flautas

Ingredients

  • 1 tsp Ground cumin
  • 1 tsp Onion powder
  • 1 tbsp Fresh garlic clove(s), minced
  • 1 Fresh zucchini squash, grated
  • 1/2 cup Shredded cheddar cheese
  • 3/4 lb 96% extra lean ground beef
  • 1 tbsp Extra virgin olive oil
  • 1 tsp Chili powder
  • 1 Vegetable oil no-stick cooking spray
  • 12 Corn tortillas

Instructions

  1. Preheat oven to 425ºF.
  2. Using a box grater, shred the zucchini squash, using a paper towel or a clean dry dish towel, squeeze the liquid out of the zucchini squash.
  3. Heat oil in a large skillet on Medium-High. Add zucchini, beef and seasonings. Cook until well browned, stirring frequently, approximately 10 minutes.
  4. Microwave the tortillas for 25 to 35 seconds to warm and make pliable.
  5. Place ¼ cup of the zucchini beef mixture into the center of the tortilla, sprinkle with cheese then roll tightly.
  6. Spray a baking sheet with non-stick spray. Pace the fluatas onto the baking sheet seam side down.
  7. Spray finished flautas with a coating of cooking spray and Bake in the oven for 15 to 17 minutes. or until the tortillas are crisp.
