Bacon Scallion Fritatta

Ingredients

  • 8 Large eggs
  • 1/2 cup Whole milk
  • 1 1/2 cups Fresh green onion, chopped, divided use
  • 3 cups Monterey Jack cheese, shredded, divided use
  • 1 tsp Mi Tienda All Purpose Seasoning, plus more as needed to taste
  • 6 Center cut bacon, diced small
  • 1 tbsp Peeled garlic cloves, minced

Instructions

  1. Preheat oven to 350ºF.
  2. In a bowl combine eggs, milk, 1 cup of green onions, half of the cheese, and seasoning.
  3. Whip everything together with a whisk, set aside.
  4. In a sauté pan set over medium heat add bacon and cook until some fat has rendered then add in garlic.
  5. Stir fry for 4 to 5 minutes until bacon starts to crisp up.
  6. Lower heat, pour in egg mixture and move around in the pan to evenly distribute eggs. Cook for 2 minutes.
  7. Place cheese evenly over mixture and place pan in oven.
  8. Bake for 25 to 35 minutes, or until eggs are set in the middle.
  9. Allow to cool, and garnish with more green onions.
