Bacon Scallion Fritatta

Ingredients
- 8 Large eggs
- 1/2 cup Whole milk
- 1 1/2 cups Fresh green onion, chopped, divided use
- 3 cups Monterey Jack cheese, shredded, divided use
- 1 tsp Mi Tienda All Purpose Seasoning, plus more as needed to taste
- 6 Center cut bacon, diced small
- 1 tbsp Peeled garlic cloves, minced
Instructions
- Preheat oven to 350ºF.
- In a bowl combine eggs, milk, 1 cup of green onions, half of the cheese, and seasoning.
- Whip everything together with a whisk, set aside.
- In a sauté pan set over medium heat add bacon and cook until some fat has rendered then add in garlic.
- Stir fry for 4 to 5 minutes until bacon starts to crisp up.
- Lower heat, pour in egg mixture and move around in the pan to evenly distribute eggs. Cook for 2 minutes.
- Place cheese evenly over mixture and place pan in oven.
- Bake for 25 to 35 minutes, or until eggs are set in the middle.
- Allow to cool, and garnish with more green onions.
