  • 1 Parmigiano Reggiano rind, small to medium size, approximately 2 to 3 oz.
  • 1 cup Heavy whipping cream
  • 2 tbsp Extra virgin olive oil
  • 1 cup Center cut bacon, diced small
  • 1/2 cup Pancetta, diced small
  • 1/4 cup Shallots, minced
  • 6 Garlic cloves, slightly crushed
  • 1 tbsp Red Wine Vinegar
  • 16 oz Bucatini pasta
  • 1/2 cup Pecorino Romano Shredded Cheese, plus more as needed to garnish
  • 3 Large eggs, yolks only, whites discarded

Instructions

  1. Place Parmesan rinds and heavy cream in a saucepan. Bring to a simmer, reduce heat to low, cook for 20 minutes or until cream has reduced by half. Strain and set aside.
  2. Cook pasta according to package instructions. Drain, reserve 1/2 cup of pasta water. Set a large saucepan over medium heat, add oil, bacon and pancetta. Cook until bacon and pancetta begin to brown.
  3. Stir in shallots and garlic, and sauté until garlic is just brown. Add red wine vinegar, turn heat to low and allow vinegar to evaporate.
  4. Add pasta water and parmesan cream to the bacon mixture, return heat to medium-high, bring to a simmer. Add pasta, pecorino and egg yolks. Turn off heat and toss pasta until sauce thickens.
  5. Garnish with parsley and more pecorino if desired.
