Bacon Jam Potato Salad

Ingredients

  • 5 lb Small red potatoes, scrubbed and cut in quarters
  • 1/2 cup Mayonnaise
  • 9 oz Bacon jam
  • 1/2 cup Red onions, diced
  • 1 cup Fully cooked bacon, crumbled
  • 1/2 cup Red bell pepper, chopped
  • 1/2 cup Celery stalks, chopped
  • 1/8 tsp Ground black pepper
  • 1/8 tsp Kosher salt

Instructions

  1. Place potatoes in a large pot with 4 quarts water; bring to a boil over high heat.
  2. Reduce heat to medium; boil potatoes 15 minutes or until tender.
  3. Drain and set aside.
  4. Blend mayonnaise and Better Than Good Bacon Jam in a large serving bowl.
  5. Add onions, bacon, peppers, celery, salt, pepper, and seasoning potatoes; toss gently.
  6. Serve while still warm or chill thoroughly and serve cold.
