Bacon Jam Meatloaf

Ingredients

  • 1 lb 93% lean ground beef
  • 1/2 cup Bacon jam, divided use
  • 1 cup Shredded mozzarella cheese
  • 2 tbsp Adams Reserve Hickory House All Purpose Rub
  • 1/2 cup Japanese style plain panko bread crumbs
  • 6 Center cut bacon, diced raw
  • 1/2 cup Fresh white onion(s), diced
  • 1 Large egg, lightly beaten

Instructions

  1. Preheat oven to 375°F.
  2. Cook bacon in a large sauté pan until crispy.
  3. Add onions and cook until translucent.
  4. In a large bowl, combine bacon and onion mixture, beef,1/4 cup bacon jam, rub, eggs, and bread crumbs. Mix well.
  5. Place mixture on parchment paper and flatten into rectangular shape approximately 1/2 inch thick. Top with cheese.
  6. Roll into jelly roll shape and pinch ends. Place on baking sheet.
  7. Bake 40 minutes then top with remaining bacon jam and cook additional 5 minutes.
  8. Serve with garlic mashed potatoes and your favorite roasted veggies.
