Bacon Glazed Salmon

Ingredients
- 3 tbsp Grapeseed oil, divided use
- 1 1/2 lb Fresh Atlantic salmon fillets
- 2 tbsp Adams Reserve House All Purpose Rub
- 1/2 cup Bacon jam
- 1 Fresh green onion, chopped for garnish
Instructions
- Preheat oven to 400ºF.
- Place a skillet over medium-high heat.
- Rub 1 1/2 tablespoons of grapeseed oil on salmon fillet then season with the rub.
- Add remaining oil to preheated skillet and heat until shimmering but not smoking.
- Add salmon skin-side up. Cook 4 to 5 minutes, turn over, and cook an additional 4 minutes, depending on thickness of fish.
- Spoon bacon jam over fish and bake for 1 to 2 minutes to finish cooking (allow 10 minutes total cooking time per inch of thickness).
- Garnish with green onions and serve.
