Bacon Glazed Salmon

Ingredients

  • 3 tbsp Grapeseed oil, divided use
  • 1 1/2 lb Fresh Atlantic salmon fillets
  • 2 tbsp Adams Reserve House All Purpose Rub
  • 1/2 cup Bacon jam
  • 1 Fresh green onion, chopped for garnish

Instructions

  1. Preheat oven to 400ºF.
  2. Place a skillet over medium-high heat.
  3. Rub 1 1/2 tablespoons of grapeseed oil on salmon fillet then season with the rub.
  4. Add remaining oil to preheated skillet and heat until shimmering but not smoking.
  5. Add salmon skin-side up. Cook 4 to 5 minutes, turn over, and cook an additional 4 minutes, depending on thickness of fish.
  6. Spoon bacon jam over fish and bake for 1 to 2 minutes to finish cooking (allow 10 minutes total cooking time per inch of thickness).
  7. Garnish with green onions and serve.
