Ingredients

  • 12 oz Mini pastry or pie shells, approximately 8 to 10 mini shells
  • 4 Large eggs
  • 1 cup Heavy whipping cream
  • 1 1/4 cups Center cut bacon, diced small
  • 1 cup Opal apples, cored and diced small
  • 1 cup Gruyère cheese, shredded or grated, plus more as needed

Instructions

  1. Preheat oven to 350ºF.
  2. Arrange pie shells on prepared sheet pan and bake for 10 minutes. Remove from oven and allow to cool.
  3. Meanwhile, make the filling. Add eggs, heavy cream, and a pinch of salt and pepper to a blender. Blend on high until smooth and creamy. Set aside.
  4. Set a sauté pan over medium-high heat. Add bacon, cook for 5 minutes then add apples and continue to cook until bacon and apples just start to brown.
  5. To assemble quiches, spoon approximately 1 tablespoon of bacon-apple filling into each pie shell followed by enough egg mixture to bring it to the top of the crust.
  6. Garnish each with cheese on top and bake for 25 to 30 minutes or until quiche-ettes are set in the middle and golden brown.
  7. Allow to cool for at least 20 minutes before serving. Garnish with green onions or fresh herbs if desired.
