Bacon and Heirloom Tomato Panzanella Salad

Serves 4
Ingredients
- 1/4 cup Extra Virgin Olive Oil
- 1 cup Center cut bacon, diced small
- 2 cups Bakery sourdough bread, cut into cubes, day old or stale is best
- 18 oz Hearts of Romaine
- 2 Medium Organic Heirloom Tomatoes, approximately 6 to 8 ounces, diced into chunks
- 1 tbsp Fresh Chives, minced
- 1 cup Fresh Basil, loosley torn
Instructions
- Place a large non-stick skillet over medium-high heat.
- Add oil and bacon and sauté until bacon is nicely crisp and fat has rendered. With a slotted spoon, remove bacon to drain on paper towels and set aside to cool.
- Turn heat to low and discard all but 1/4 cup of rendered fat.
- Add bread chunks and toss until well coated with bacon grease. Cook until bread just starts to toast slightly, approximately 3 to 6 minutes.
- Turn heat off and allow bread to sit until cool, meanwhile prepare other salad ingredients.
- In a large serving bowl, add romaine, tomatoes, cooled bacon pieces, chives, basil and toasted bread pieces. Toss to evenly mix.
- Dress salad with your favorite salad dressing and serve.
- Chef's Note: I like to use avocado ranch dressing on this salad.
