Bacon and Blue Cheese Potato Salad

Ingredients

  • 2 lb Baby red potato(es)
  • 1/4 tsp Kosher salt
  • 8 slices Fully cooked bacon
  • 2/3 cup Olive oil
  • 1/3 cup Apple cider vinegar
  • 1 tbsp Stone ground mustard
  • 1 tbsp Honey
  • 2 tsp Fresh lemons, zested
  • 1/4 cup Shallot, finely chopped
  • 1/4 cup Fresh Italian parsley, chopped
  • 1/2 cup Crumbled blue cheese
  • 2 Large eggs, hard boiled and peeled

Instructions

  1. Cook potatoes in boiling salted water 10 to 15 minutes or until just tender. Drain well.
  2. Heat bacon in microwave according to package directions. Let cool; then chop coarsely.
  3. To make dressing, whisk oil, cider vinegar, mustard, honey, and lemon zest together in a large bowl.
  4. Toss warm potatoes in dressing. Add bacon, shallots, parsley and blue cheese; toss gently to combine. Serve at room temperature or chill until serving time.
  5. Chop eggs and sprinkle over salad right before serving.
