Avocado Shrimp Cocktail

Ingredients

  • 1/4 cup White wine
  • 1/8 tsp Cayenne pepper seasoning
  • 1 1/2 cups Cooked or raw shrimp (peeled & deveined, 41 - 50 count)
  • 1 Large avocado, cut in half (remove meat and save the skins)
  • 1/2 cup Red onions, small diced
  • 1 tsp Kosher salt
  • 1/4 cup Fresh cilantro, chopped
  • 1/2 cup Roma tomatoes, small diced
  • 1 Lemon(s), juiced and divided

Instructions

  1. In a medium pot or skillet, combine white wine, lemon juice, salt and 1 cup water. Bring to a simmer.
  2. Add shrimp to pot and bring to a boil. Remove from heat and allow the mixture to sit so the shrimp finish cooking. If using raw shrimp, they are done when brightly colored and opaque.
  3. In a small bowl, combine onion, lemon juice, Roma tomato, cilantro, avocado, and cayenne pepper.
  4. Stir to begin breaking down the avocado; after a few minutes mixture will become slightly creamy.
  5. Add cooked shrimp and toss to combine. Add salt and cayenne as desired.
  6. Fill each ½ avocado skin with shrimp cocktail mixture. Serve chilled or fresh at room temperature.
