Avocado Shrimp Cocktail

Ingredients
- 1/4 cup White wine
- 1/8 tsp Cayenne pepper seasoning
- 1 1/2 cups Cooked or raw shrimp (peeled & deveined, 41 - 50 count)
- 1 Large avocado, cut in half (remove meat and save the skins)
- 1/2 cup Red onions, small diced
- 1 tsp Kosher salt
- 1/4 cup Fresh cilantro, chopped
- 1/2 cup Roma tomatoes, small diced
- 1 Lemon(s), juiced and divided
Instructions
- In a medium pot or skillet, combine white wine, lemon juice, salt and 1 cup water. Bring to a simmer.
- Add shrimp to pot and bring to a boil. Remove from heat and allow the mixture to sit so the shrimp finish cooking. If using raw shrimp, they are done when brightly colored and opaque.
- In a small bowl, combine onion, lemon juice, Roma tomato, cilantro, avocado, and cayenne pepper.
- Stir to begin breaking down the avocado; after a few minutes mixture will become slightly creamy.
- Add cooked shrimp and toss to combine. Add salt and cayenne as desired.
- Fill each ½ avocado skin with shrimp cocktail mixture. Serve chilled or fresh at room temperature.
