Asparagus with Brown Butter

Ingredients

  • 2 Lemons, juiced
  • 1 lb Fresh asparagus, peeled
  • 4 tbsp Salted butter
  • 1/4 cup Fresh chives, finely minced

Instructions

  1. Bring a large pot of water to a simmer over medium-high heat. Add lemons and juice, then season generously with salt.
  2. Remove the woody 1/2 to 3/4 inch bottom of the asparagus stalks then peel the outer skin.
  3. Place asparagus in the simmering water and cook 2 to 3 minutes.
  4. Meanwhile, heat butter in a large nonstick skillet over medium-high heat until butter begins to brown.
  5. Immediately transfer the asparagus to the pan and sauté briefly. Season generously with salt, pepper and chives.
