Asparagus & Sun-Dried Tomato Sauté

Ingredients

  • 6 Garlic cloves, minced
  • 8 oz Sun dried tomato halves in oil, julienne cut
  • 1/2 tsp Crushed red pepper
  • 2 Fresh asparagus
  • 1/2 tsp Ground black pepper
  • 1/2 tsp Kosher salt

Instructions

  1. Wash asparagus. Snap woody stems from bottom and discard. Pat dry with a clean towel. Cut asparagus into 2-inch pieces. Chop garlic very finely to mince.
  2. Heat tomatoes (including oil) in a large skillet or wok over Medium-High heat. Add garlic and asparagus. Saute 3 to 4 minutes until asparagus is crisp-tender.
  3. Stir in salt, black pepper and red pepper flakes. Remove from heat and serve while hot.
