Asparagus Pesto Pasta

Unsaved Asparagus Pesto Pasta

Ingredients

  • 1/2 cup Basil pesto
  • 12 oz Whole wheat penne pasta, uncooked
  • 1 pt Cherry tomatoes, sliced in half
  • 1 lb Fresh asparagus
  • 1/2 tsp Ground black pepper
  • 1/4 tsp Kosher salt
  • 5 oz Fresh spinach

Instructions

  1. Bring 4 quarts of water to a boil, add pasta, and cook until al dente. Set aside.
  2. Chop dry ends off asparagus, and chop asparagus into 1-inch sections.
  3. Prepare a bowl of ice water, and set aside.
  4. In the top half of a steamer pan set, steam asparagus covered for 3 ½ minutes, until tender.
  5. Transfer asparagus to ice water. Drain in a colander, and pat dry with paper towels.
  6. In a food processor, pulse together basil pesto, spinach, 1/3 cup water, salt, and pepper.
  7. In a large bowl, toss pasta, pesto, asparagus, and cherry tomatoes together.
