Asparagus Pesto Pasta

Ingredients
- 1/2 cup Basil pesto
- 12 oz Whole wheat penne pasta, uncooked
- 1 pt Cherry tomatoes, sliced in half
- 1 lb Fresh asparagus
- 1/2 tsp Ground black pepper
- 1/4 tsp Kosher salt
- 5 oz Fresh spinach
Instructions
- Bring 4 quarts of water to a boil, add pasta, and cook until al dente. Set aside.
- Chop dry ends off asparagus, and chop asparagus into 1-inch sections.
- Prepare a bowl of ice water, and set aside.
- In the top half of a steamer pan set, steam asparagus covered for 3 ½ minutes, until tender.
- Transfer asparagus to ice water. Drain in a colander, and pat dry with paper towels.
- In a food processor, pulse together basil pesto, spinach, 1/3 cup water, salt, and pepper.
- In a large bowl, toss pasta, pesto, asparagus, and cherry tomatoes together.
