Asparagus Manchego Bisque

Unsaved Asparagus Manchego Bisque

Ingredients

  • 1/4 cup Shallot, very finely chopped
  • 5 Fresh asparagus, sliced very thinly
  • 1/2 cup Vegetable broth
  • 1/2 tsp Dried thyme
  • 16 1/3 fl oz Ferrer Green Asparagus Soup
  • 1/4 cup Heavy whipping cream
  • 1/4 cup Manchego cheese, finely grated
  • 1/2 tsp Ground black pepper

Instructions

  1. Heat a medium sized sauce pan over medium high heat. Add shallots, asparagus, stock and thyme to pan.
  2. Bring to a simmer and cook until shallots and asparagus are tender/firm and stock is reduced by half.
  3. Reduce heat to medium. Add Ferrer soup, cream and cheese to pan. Stir and simmer gently, just to heat through, about 3 minutes. Top with freshly ground black pepper & serve.
