Arugula and Basil Salad with Grilled Tri-Tip

Ingredients

  • 1/4 cup Fresh squeezed lemon juice
  • 1 tsp Fresh garlic, minced finely or zested, plus more as needed
  • 1/3 cup Extra virgin olive oil
  • 2 lb Boneless tri-tip roast, approximately 1.75 to 2lbs
  • 5 oz Baby arugula
  • 2 cups Fresh basil, leaves only torn into pieces, stems discarded
  • 1/3 cup Shaved Parmesan cheese, plus more as needed for garnishing

Instructions

  1. Preheat grill to medium-high heat, approximately 350ºF to 375ºF.
  2. Combine lemon juice, garlic and olive oil in a small bowl and whisk to combine. Season to taste and set aside or refrigerate.
  3. Season tri-tip liberally on all sides with salt and pepper.
  4. Grill meat over direct heat to get desired grill marks then move to indirect heat to finish cooking to desired doneness.135ºF to 140ºF internal temperature is recommended.
  5. Remove meat from grill and allow to rest while assembling rest of salad.
  6. In a large bowl combine arugula, basil and shaved Parmesan cheese. Toss to combine. Dress salad with lemon dressing as needed.
  7. Cut steak against the grain into thin slices and serve over salad. Garnish with more Parmesan cheese if desired.
