Artichoke Rice Pilaf

Serves 6
Ingredients
- 6 oz Marinated artichoke hearts
- 1 cup Red bell peppers, cored, seeded and chopped
- 4 Garlic cloves, minced
- 1 tbsp Unsalted butter
- 1 1/2 cups White rice, uncooked
- 14.5 oz Chicken broth
- 1/2 cup Water
- 6 oz Shredded Italian blend cheese
- 1/2 cup Fresh Italian parsley, minced
Instructions
- Drain artichokes and chop coarsely. Chop bell pepper and garlic very finely to mince.
- Heat butter in a 3 quart saucepan over medium-high heat.
- Sauté rice, bell pepper and garlic in butter 4-5 minutes or until rice begins to brown.
- Stir in artichokes, chicken broth and water; bring to a boil.
- Reduce heat to low; cover pot and simmer for 15 minutes.
- Remove from heat and let stand 5 minutes.
- Stir in cheese and parsley. Serve while hot
