Artichoke Greek Goddess Dressing

Ingredients

  • 9 oz Artichoke hearts, canned, drained
  • 5 tbsp Fresh lemons, juice, about 2.5 oz
  • 7 Fresh garlic clove, chopped (1.25 oz)
  • 6 Green onion, chopped (2.0 oz)
  • 1 cup Fresh Italian parsley, chopped (.75 oz)
  • 2 tbsp Fresh oregano, leaves only (0.1 oz)
  • 2 tsp Fresh mint, chopped (0.6 oz)
  • 9 oz Silken tofu
  • 3/4 cup Olive oil, (4.5 oz)
  • 3/4 tsp Kosher salt, (0.15 oz salt)

Instructions

  1. Add artichokes, lemon juice, garlic, green onions, parsley, oregano, mint, tofu, olive oil and salt. Blend until very smooth. Adjust seasoning as needed with additional salt and pepper to taste.
  2. Chef's note: This is a very thick dressing, perfect for dipping. For a more liquid dressing adjust texture with a little more olive oil or water.
