Arroz Con Pollo

Ingredients
- 1 1/2 tsp Knorr ® Tomato Bouillon with Chicken flavor Cube OR Knorr® Tomato Bouillon with Chicken flavor
- 2 tbsp Vegetable oil
- 1 1/2 lb Boneless, skinless chicken thighs
- 1 Green bell pepper
- 1 Spanish onion
- 1 tbsp Garlic, chopped
- 2 cups Water
- 1 can Low sodium tomato sauce
- 1 1/2 cups Uncooked rice
- 1 cup Thawed frozen green peas
- 4 oz Sliced pimentos, drained
- 1 tsp Dried oregano leaves
- 1 tsp Ground Cumin
Instructions
- Heat oil in 12-inch nonstick skillet over medium-high heat. Cut chicken into bite- sized pieces. Add to skillet and cook 2 minutes until browned.
- While chicken is cooking, dice green pepper and onion. Add to skillet with garlic and cook 2 more minutes.
- Stir in water, tomato sauce, rice, peas, pimentos, Knorr® Tomato Bouillon with Chicken flavor, cumin and oregano. Bring to a boil stirring until Bouillon is dissolved.
- Lower heat to medium-low; cover and cook 18 minutes or until rice is tender. Serve, if desired, with a watercress salad.
